Rokusuke Honpo's Umashio is a seasoned umami salt made by concentrating the natural flavour of three ingredients — dried shiitake mushroom, kombu kelp, and dried scallop — into a refined white salt base at low temperature, preserving their delicate character without cooking them harsh. The result contains approximately three times the umami of the brand's standard ara-shio (coarse salt), but the overall effect is not overwhelming; the salt tastes noticeably rounder and milder than plain salt, with a soft, lingering depth that makes it easy to use less while still seasoning food thoroughly. A small pinch placed directly on the tongue is the clearest way to understand what it does. It works on almost everything that benefits from salt: grilled meat and fish, salads, pasta, tofu, steamed rice, and soft-boiled eggs. There is no need for additional seasoning — the salt does the work on its own, and quietly. At 130g the bag is a generous everyday size, and keeps well stored away from moisture and direct light.
