Hokuren's Katakuriko is a potato starch made from 100% Hokkaido-grown potatoes, produced by Hokuren — the agricultural cooperative federation that has been at the centre of Hokkaido's farming industry for over a century. Potato starch from Hokkaido is known for producing a particularly clean, glossy finish when used as a thickener, and for giving fried coatings a noticeably lighter, crispier texture than wheat flour alone.
