Muscat of Alexandria, known as the queen of grapes, made into a dessert vinegar using only grape vinegar and grape juice from that variety, for a refined aroma and gentle acidity.
Because the juice is fermented into fruit vinegar, the openness of the grape itself comes through. It is brewed by Uchibori, founded in 1876, following the principle that vinegar-making begins with sake-making.
To drink
• Soda: one part vinegar to four parts chilled soda, lifting the aroma — good for a glass before a meal
• Water: one part vinegar to four parts chilled water, for a clean, refreshing taste
• Rooibos tea: one part vinegar to eight parts rooibos tea, for an open, fragrant aroma
• Beer: one part vinegar to nine parts beer, for a bright, acidic accent
Use 15ml per serving to make approximately 16 drinks per bottle. For a stronger flavour, use 30ml per serving, giving approximately 8 drinks.
To eat
• A spoonful undiluted over vanilla ice cream or yoghurt
