Hiyamugi sits between somen and udon in terms of thickness — thicker than the fine threads of somen, but lighter and more delicate than a full udon noodle. Kawada Seimen's Sanuki Hiyamugi uses quality wheat flour from the Sanuki region and carries the characteristic firmness and smooth finish that the area's noodle-making tradition is built on. Served chilled in summer with a cold tsuyu dipping broth, they offer a slightly more substantial bite than somen while still eating with the same cool, refreshing quality that makes cold Japanese noodles so well suited to warm weather.
