Sanuki — the old name for what is now Kagawa Prefecture on the island of Shikoku — is one of Japan's most celebrated noodle-making regions, known equally for its udon and its somen. Kawada Seimen's Sanuki Somen uses quality wheat flour selected for noodle production in that region and is made with the care the area's long noodle-making tradition demands. The result is a somen with the characteristic firm bite and smooth, clean finish that the Sanuki style is known for — the noodles hold their shape well after cooking without becoming soft or sticky. They are most naturally served chilled in summer with a cold dipping broth of tsuyu and wasabi, but work equally well in warm soups as nyumen during cooler months.
