Mizu yokan is one of Japan's most quietly elegant summer wagashi — a chilled, softly set azuki jelly that is cool and gently sweet, with a flavour that asks for nothing else alongside it. Imuraya's Wagashiya series brings a more considered approach to the format: this Ogura variety uses both azuki bean paste and candied azuki (amaNatto) in the same jelly, giving it a richer, more textured flavour than standard mizu yokan, with occasional whole beans adding a soft bite through the smooth jelly. The result is a mizu yokan that tastes as though it came from a dedicated wagashi shop.
