Shimofuri Hiratake is a variety of oyster mushroom cultivated in Japan, distinguished by its marbled, frost-like pattern across the cap — the “shimofuri” (霜降り) in the name refers to the characteristic streaked or speckled colouring that sets it apart from standard hiratake. The caps are broad and fan-shaped with a firm, meaty texture, and the flavour is mild and clean with a pleasant, subtle earthiness and a natural umami that deepens with cooking. It cooks quickly in a hot pan — slice or tear by hand and stir-fry with butter and soy sauce, add to pasta with garlic and olive oil, simmer into soups and nabe, or use alongside tofu and vegetables in a light braise. The texture holds well under heat without becoming mushy, and the mushroom absorbs surrounding flavours readily. At 100g it is a practical single-use portion for one or two servings. Best used within a day or two of purchase and stored refrigerated.
