Crafted with carefully selected buckwheat flour and wheat flour from Shinshu or Tochigi, this nihachi soba is meticulously hand-made by a dedicated artisan.
The term nihachi refers to the classic ratio of 80% buckwheat flour and 20% wheat flour, a blend prized for achieving both a pronounced buckwheat aroma and an elegant, smooth texture.
The soba artisan was born into a long-established soba-making family in Arima and continues to refine her skills at Shitennōji Hayauchi, a Michelin-listed restaurant in Japan. To draw out the subtle fragrance of the flour and the clean, silky finish unique to well-made soba, she pays precise attention to temperature, humidity, and hydration at every stage. Each strand is shaped with deep intention and quiet discipline.
Carrying the heartfelt wish of “Kotoho” — the Japanese notion of celebrating and blessing the life and future happiness of the person who receives it — this soba is crafted so that every bite brings a moment of gentle joy.
Only about five servings can be made at one time, making it a truly limited creation. Please savour the clarity and freshness that only hand-made soba can offer.
