Details
Ninben is one of Japan's most respected katsuobushi makers, with a history stretching back over three centuries in Tokyo (Nihonbashi). This dashi pack range was developed in collaboration with Tanita Shokudo — the health-conscious canteen concept from the makers of the Tanita body composition scales — with a specific brief: create a dashi that works particularly well in miso soup, without any added salt, MSG or artificial seasoning. The result uses just three ingredients: bonito flakes, dried sardines and Hokkaido kelp, blended and balanced to produce a broth that is assertive enough to hold its own against the flavour of miso without overpowering it. Each bag is steeped in 500ml of water for around five minutes. The same dashi also works well in simmered dishes, hot pots and noodle broths. A thoughtful, additive-free dashi for anyone who wants their everyday miso soup to taste genuinely good.
