Osuya Ginza Aroma Vinegar Juniper Berry 250ml
Details
Juniper berries steeped in grape vinegar to draw out a sweet, open aroma. This is an aroma vinegar — scent carried into a fruit vinegar — and it shows a different face from the dessert vinegars.
The base is grape vinegar fermented from the juice itself. It is brewed by Uchibori, founded in 1876, following the principle that vinegar-making begins with sake-making.
To drink
• Hot water: one part vinegar to four parts water at 70–80°C, when warmth lifts the aroma — good for a quiet moment
• Water or soda: one part vinegar to four parts chilled water or soda, for a clean, refreshing taste
• Rooibos tea: one part vinegar to eight parts rooibos tea, for a fragrant, mellow taste
• Beer: one part vinegar to nine parts beer, for a bright, acidic accent
To eat
• Undiluted with yoghurt or cheese
