Cantonese preserved duck eggs - known in English as century eggs, and in Chinese as pidan or songhua dan ("pine-flower eggs") for the delicate frost-like crystals that bloom across the albumen during curing. Made by Xuri (established 1996) at their EU-registered Kaiping facility in Guangdong (UK approval no. 4400/07008) using a controlled constant-temperature curing method for clean, consistent results.
