Marukome's Plus Koji Nama Miso is a miso made with just three ingredients: domestically grown Japanese rice, soybeans, and salt — nothing added, nothing removed. The absence of alcohol and additional seasoning means the living enzymes and natural fermentation character of the miso remain intact, giving it the freshness and depth that "nama" (raw, unprocessed) miso is valued for. The flavour is clean, round, and genuinely full of umami from the rice koji fermentation alone, with none of the flat or processed quality that can come from over-stabilised miso. It works across the full range of miso applications — a classic miso soup base for tofu, wakame, or clams; a marinade for grilled fish, chicken, and pork; mixed into dressings and dipping sauces; or used in nabe hot pot. Store refrigerated and keep sealed to preserve the living character of the miso.
