Chosen as one of Japan's three great manju, Shiose manju represents the origin of Japanese wagashi. Every morning, craftsmen peel and grate yam by hand, then mix it with rice flour while adjusting for temperature and humidity to make the dough. The moist flavour of the yam combines with Shiose bean paste made from carefully selected Hokkaido Erimo beans and coarse sugar, creating an elegant taste.
