The miso base is the same wooden barrel-aged豆みそ used across Noda Miso's range, brewed in cedar barrels for at least 18 months and seasoned with a kombu dashi, creating a broth that is deep, savoury and entirely plant-based. The garnish — spring onion, fried tofu and wakame — is also 100% plant-derived, with no animal products, no MSG and no GMO ingredients. Gluten-free throughout.
