Snow pear, the crisp, juicy Asian pear, dried in whole slices so it keeps its sweetness and the gentle, moistening character that Cantonese cooks prize in autumn and winter when the air turns dry. On Kee's slices are clean and pale, easy to use straight from the bag after a quick rinse. Simmer a few with apple, dried fig and almonds for a classic soothing soup, add them to a pot with snow fungus and rock sugar for a dessert soup, or steep two or three slices in hot water for a naturally sweet pear tea. Store in a cool, dry place; once opened keep refrigerated and use within three months.
