Shirakabegura is a sake brand from Takara Shuzo, brewed at their historic Nishiki-no-Kura brewery in Nishimiya City, Hyogo Prefecture — a region long regarded as one of Japan’s finest sake brewing districts, known for its exceptionally soft groundwater drawn from the Rokko mountain range. The Junmai Daiginjo is the premium expression in the range: a purely rice-based sake with no added alcohol, made from rice polished down to at least 50% of its original size to concentrate the starchy core and remove the outer layers that can add roughness. The result is a sake with a clean, elegant character — a delicate, fruity ginjo aroma that opens in the glass, a smooth and refined body with a gentle sweetness, and a clean finish that does not linger too long. Serve well-chilled in a wine glass to appreciate the aroma, or in a traditional ochoko. The 300ml bottle is a practical format for a single sitting or a considered gift. At 15.5% ABV it is approachable for those new to sake as well as those already familiar with the style.
