The third summer festival selection from WASO — four original dishes made with Monohon's Japanese wheat noodles, assembled for a ramen evening with a bit more range than usual. The Hakata-style Light Tonkotsu is the familiar, dependable pork bone broth that anchors all three sets. The Yuzu Shio Ramen is the lightest bowl of the four — a delicate salt broth with the clean, aromatic brightness of yuzu peel and dried anchovy, and a finish that is refreshing in a way that richer broths cannot quite replicate. The Japanese-style Dandan Noodles bring the heat — a spiced minced pork broth layered with miso, sesame, sansho pepper and tobanjan for a genuinely complex spicy bowl. And the Traditional Soy Sauce Ramen rounds things off with a deeply flavoured, clean soy broth built on katsuo dashi and kombu, topped with slow-cooked chashu and nori — the kind of bowl that reminds you why shoyu ramen has lasted as long as it has.
