Most custard puddings are baked in a bain-marie in the oven, but at WASO we use our own steam method. By heating slowly at a carefully controlled temperature, we draw out the natural silkiness of the egg to its fullest. A layer of bittersweet caramel sauce nestled at the bottom adds a welcome contrast to the sweetness, keeping every spoonful interesting right to the last.
