Hiyajiru is a chilled soup from Miyazaki in southern Japan — traditionally poured over rice with tofu and cucumber, it is one of those summer dishes that asks very little and delivers a great deal. Marumiya's version uses a refined flying fish (ago) dashi as its base, combined with soy sauce, ground sesame and the bright, floral fragrance of yuzu to create a broth that is clean, layered and cooling in all the right ways. Flaked itoyori sea bream is included in the pouch, so only tofu and cucumber need to be prepared. The soup can be chilled and poured straight over rice without any cooking, and works equally well as a dipping broth for cold somen or udon on a warm day. A seasonal product that introduces one of Japan's most refreshing summer dishes to the home kitchen.
