Sanuki Shisei is a noodle maker based in Kagawa Prefecture — the home of Sanuki udon — and this Aged Udon is made using only two ingredients: wheat flour and salt, with no additives of any kind. The production process recreates the traditional ashifumi (foot-treading) method of kneading the dough, which develops the gluten structure more fully than standard machine mixing and produces a noodle with a noticeably deeper, more resilient chew. The dough is then rested and matured before drying, allowing the flavour of the wheat to develop further and the texture to set. The result is a dried udon that eats closer to a freshly made noodle than most — firm, springy, and satisfying in the way that properly made Sanuki udon tends to be. A straightforward, honest noodle made the way it should be.
