Masuzuka Miso's Kodomo no Mame Miso is a豆みそ — a soybean-only red miso of the type associated with Aichi Prefecture and the broader Hatcho miso tradition — made using a wooden barrel natural brewing method and aged for at least 18 months. Despite its name ("children's miso"), it is not sweetened or diluted for younger palates; rather, it is a straightforward, honest miso made from Aichi-grown soybeans and salt alone, with no chemical seasonings, alcohol or additives of any kind.
