Salt-free soba is a small but meaningful departure from the everyday — without added salt, the natural fragrance and flavour of the buckwheat flour come through more cleanly, and the noodle itself takes on a firmer, more satisfying bite. Itsuki's Yamaimo Soba uses yamaimo mountain yam flour as the binding agent rather than salt, giving the noodles a smooth, slightly springy texture that holds its shape well even after cooking.
The soba is made using a hikigurumi milling method that retains the outer layers of the buckwheat grain, contributing a deeper, earthier flavour and a pleasingly speckled appearance. It works well in a chilled zaru soba with dipping sauce, or in a warm broth with simple toppings — the buckwheat flavour is prominent enough to stand on its own without much embellishment.
