Niigata is one of Japan’s most renowned rice-growing regions, blessed with pure snowmelt water, surrounded by high mountains, and known for its distinct differences between day and night temperatures. Among the rice varieties grown there, Koshihikari is one of the most representative and widely loved, prized for its beautifully defined grains, elegant sweetness, and rich fragrance. Once cooked, it has a glossy finish and offers a deep, layered umami with every bite.
