Kubota Senjyu is the most widely known expression in the Kubota lineup from Asahi Shuzo, a brewery founded in 1830 in Nagaoka City, Niigata Prefecture, and one of the sake labels that helped establish Niigata’s reputation for clean, dry, and food-friendly sake through the 1980s and beyond. Where the flagship Manju is a pure-rice sake polished to an exceptional degree, Senjyu is a ginjo — meaning the rice is polished to at least 60% of its original size and a small amount of distilled alcohol is added at the end of fermentation, which lifts the aroma and contributes to the characteristically clean, dry finish. The result is a sake that is approachable and consistent: a light ginjo fragrance, a lean and refined body with minimal sweetness, and a crisp, dry finish that suits drinking alongside food rather than on its own. Particularly good with sashimi, white fish, tofu, and lighter Japanese or European dishes. Serve well-chilled. The 300ml bottle is a practical size for a single sitting and makes a considered everyday gift for anyone who enjoys Japanese sake.
