Osamado Kobushi-age Salt (Fried Rice Crackers)

A bite-sized fried mochi from Osamado Honten, a long-established maker founded in 1924 in Asakusa, Tokyo, made with its traditional craft. Slightly larger than one mouthful, it is crisp outside and light and flaky within. The okaki of Japanese glutinous rice is seasoned with mellow Chatan salt from Okinawa. The salt's gentle savouriness lifts the sweetness of the mochi rice, giving a simple yet wonderfully rounded, moreish flavour.
