Kitakata, a small city in Fukushima Prefecture, is one of Japan's most celebrated ramen towns — known for its flat, wavy noodles and a clean, light soy sauce broth built on pork and chicken with a hint of dried fish. Sapporo Ichiban's Tabimen series sets out to bring the character of regional Japanese ramen into a convenient cup format, and this Kitakata Shoyu Ramen does a creditable job. The noodles are flat and curled in the Kitakata style, designed to pick up the broth with each mouthful, and the soup itself is clear and well-rounded — soy-based with pork and chicken umami and a gentle dried sardine and bonito finish. Char siu pork and spring onion complete the bowl. A satisfying cup of regional Japanese ramen that travels well.
