Kitakata, a small city in Fukushima Prefecture, is one of Japan's most celebrated ramen towns — known for its flat, wavy noodles and a clean, light soy sauce broth built on pork and chicken with a hint of dried fish. Sapporo Ichiban's Tabimen series sets out to bring the character of regional Japanese ramen into a convenient cup format, and this Kitakata Shoyu Ramen does a creditable job.
