Dried bamboo leaves from Zheng Feng, a long-running Guangdong pantry brand. Wide and supple, these are the traditional wrapper for zongzi - the savoury and sweet glutinous-rice parcels at the heart of the Dragon Boat Festival - and lend their unmistakable grassy-green aroma to whatever's cooked inside. Soak in warm water until pliable, then fold around glutinous rice and fillings such as cured pork, salted egg yolk, mung beans, red beans, chestnut or jujube before steaming. Equally useful as a natural liner for steamer baskets, dim-sum trays and lotus-leaf-style rice parcels.
