Hokuren's Katakuriko is a potato starch made from 100% Hokkaido-grown potatoes, produced by Hokuren — the agricultural cooperative federation that has been at the centre of Hokkaido's farming industry for over a century. Potato starch from Hokkaido is known for producing a particularly clean, glossy finish when used as a thickener, and for giving fried coatings a noticeably lighter, crispier texture than wheat flour alone. In Japanese cooking, it is one of the most versatile pantry staples: used to thicken sauces and soups (ankake), to coat chicken and fish before frying (karaage, tempura), to bind tofu and fish paste dishes, and to give a silky texture to chilled desserts like kuzu mochi.
