This firm tofu has a clean, concentrated soy flavour and a noticeably smooth texture for a momen-style tofu. The added soy protein gives it a slightly denser, more substantial body that holds its shape well under heat, making it suited to a wider range of cooking methods than its softer counterpart. It works well in miso soup, simmered dishes, stir-fries and agedashi tofu, and is equally good sliced and served cold as hiyayakko.
