A deeply savoury, umami-rich bowl built on mellow black garlic and earthy mushrooms. Chewy's instant rice vermicelli is made from imported Thai rice and is not fried, for light, springy noodles. A rich paste of black garlic, tea tree mushroom and roasted garlic meets a mushroom-packed soup base, dried cabbage and crisp fried garlic, finished with a fragrant Sichuan-pepper chilli oil for a gentle warmth. Just add hot water, steep and stir for a moreish, aromatic bowl.
