Ibaraki Prefecture's Koshihikari is grown in one of Japan's most productive agricultural regions, where rich flatland soil and abundant water sources produce rice with the variety's characteristic sweet, well-rounded flavour. This brown rice (genmai) version retains the bran layer that is removed in white rice milling, leaving a grain with a nuttier, more complex flavour and a satisfying chew that white rice does not offer. Brown rice takes a little more water and time to cook than white rice — soaking for a few hours beforehand makes a noticeable difference — but the result is a deeply flavoured, substantial bowl that pairs well with Japanese pickles, miso soup and simple grilled dishes.
