A jar of kanroni — the traditional Japanese preparation of chestnuts slowly simmered in a light sugar syrup until they become tender and deeply candied, with a soft, rounded sweetness that preserves the natural flavour of the nut rather than concealing it. This version is made by JA Ehime Taiki, an agricultural cooperative in Ehime Prefecture on Shikoku. The chestnuts are finished with gardenia colour for their characteristic warm golden tone. Ready to use straight from the jar, they work well served simply alongside Japanese sweets and green tea, spooned over vanilla ice cream, or used as a topping for kurigohan (chestnut rice), yoghurt, and cream desserts.
