Crafted by a katsuobushi specialist, these fragrant clear soups feature our signature dashi, overflowing with the rich aroma of premium dried bonito. Each serving is delicately encased in a fragrant monaka shell, made from fresh mochi and hand-baked to perfection.
As you add hot water, the sophisticated flavour of the dashi and fresh ingredients bloom from within the shell. Please enjoy this flavourful soup, where the distinct umami of each ingredient harmonises beautifully in your bowl.
[Soup Varieties]
・Yuba (2 servings): A blended-dashi clear soup featuring Mt. Hiei yuba (tofu skin), garnished with mitsuba and yuzu.
・Shark Fin (2 servings): The rich flavour and texture of shark fin, gently rounded with beaten egg in a soft, Japanese-style broth.
