White soy sauce — shiro shoyu — is one of Japan's rarest and most specialised soy sauce varieties, and Aichi Prefecture's Hekinan region is considered its original home. Where standard koikuchi soy sauce is dark and assertive, shiro shoyu is a clear, amber-coloured liquid made primarily from wheat with only a small proportion of soy, giving it a flavour that is light, sweet and gently fragrant rather than deeply savoury. The colour is noticeably paler than even usukuchi light soy sauce, making it the condiment of choice for dishes where the natural colours of the ingredients must be preserved — tamagoyaki, chawanmushi, clear soups, tororo, and takikomi gohan all show it at its best.
