Wadakan Tokkyu Koikuchi Naturally Brewed Soy Sauce 1L

Wadakan has been making soy sauce in Aomori Prefecture in northern Japan since 1903, drawing on the pure, mineral-rich water of the region's natural environment throughout its production. This Tokkyu — Special Grade — Koikuchi Soy Sauce is a naturally brewed hon-jozo variety, certified to JAS Special Grade standards, and produced in a factory with ISO9001 quality management accreditation. The brewing method follows over a century of Wadakan's own tradition: soybeans, wheat and salt are fermented slowly and unhurriedly, developing a deep, round umami and a clean, balanced flavour that stands up well to both cooking and use at the table. It works naturally across the full range of Japanese cooking — simmered dishes, marinades, stir-fries, sashimi and noodle broths — and carries the honest character of a soy sauce made with genuine care.
