Wadakan's Hakkoda Spring Water Mirin-Type Seasoning is made from 100% Japanese-grown rice, brewed using the underground spring water of the Hakkoda mountain range in Aomori Prefecture. Using starch syrup as its only sugar source keeps the sweetness clean and controlled, while the alcohol content helps ingredients hold their shape through simmering without breaking apart. The result is a mirin-type seasoning that gives a genuine, well-defined glaze — the characteristic teri and tsuya that Japanese home cooking relies on to finish braised fish, teriyaki and simmered vegetables properly. Produced at the same ISO9001-certified facility as Wadakan's soy sauce and cooking sake, it makes a natural companion to both in everyday Japanese cooking.
