From the same Joshu range as Akagi's celebrated somen, this Hiyamugi is a slightly thicker dried noodle that sits between somen and udon in texture — springier to the bite, with a satisfying chew that holds up well in both cold and warm preparations. Made with Gunma Prefecture's quality wheat and water, and produced to traditional Japanese recipes, it cooks in just a few minutes and is particularly well suited to serving cold with a classic tsuyu dipping sauce. The 270g pack is the same practical size as the somen, making it easy to keep both styles in the kitchen.
