Chen Ji Taiwan Gangshan HaHa Hot Bean Sauce (Doubanjiang) 450g
A traditional Taiwanese spicy fermented chilli bean paste from Chen Ji, one of the recognised heritage doubanjiang houses of Gangshan - a district in Kaohsiung, southern Taiwan. Taiwan's Gangshan Hot Bean Sauce tradition began in 1948, when Air Force veterans from Sichuan settled in the local military dependents' village and reproduced their hometown's fermented chilli paste. Today Gangshan doubanjiang is officially recognised as one of the area's Three Treasures, alongside its goat and honey. Pepper-led, fermented to a deep red-brown paste with rich umami salt, mellow heat and the savoury funk that turns home cooking into proper Sichuan-Taiwanese fare. Use as the foundation for mapo tofu, twice-cooked pork, dan dan noodles, gong bao stir-fries, or beef noodle soup; or stir a spoonful into ramen or a hot pot dipping bowl for an instant lift. 450g jar - roughly 25 servings at 1 tablespoon each. Refrigerate after opening.
