Jet-black tortilla triangles carry the deep, savoury richness of century egg - that unmistakable mellow, almost creamy note - layered over toasted corn and a whisper of white pepper. The crunch is pure Doritos, but the finish is unmistakably Cantonese. A conversation piece at any gathering, and very good indeed with a cold beer.
