A Taiwanese hot pot classic reimagined for the plant-based table. Hanyu's Spicy Stinky Tofu Hot Pot Base simmers cubes of fermented tofu in a deep, chilli-laced broth built on doubanjiang, fermented rice wine and a warm blend of star anise, cinnamon and Sichuan pepper. The fermentation gives the tofu its famously bold, savoury edge, while the broth's gentle numbing heat keeps every spoonful moreish rather than overwhelming. Ready in minutes: simply pour into a pot, bring to the boil and add your own tofu, leafy greens, mushrooms, noodles or vegetarian dumplings.
