Jung Nung's wide bean thread sheets are silky, translucent and satisfyingly slippery, made purely from potato, mung bean and pea starch for that signature Q-bounce bite. Soaked, blanched and chilled, the noodles are tossed with a hand-made sizzled chilli oil and a fragrant Sichuan-style sauce built on broad bean paste, cinnamon, star anise, cumin and green Sichuan pepper, finished with crushed peanuts and sesame for extra crunch. Cooling and refreshing in summer, it also makes the classic cold side dish to cut through a rich winter hot pot. Simply soak, boil, ice-bath, then stir through the included oil and sauce packets, ready in minutes, with cucumber and garlic as the traditional finishing touch.
