Boat noodles, or kuay tiew rua, started life on the canals of Bangkok, ladled out from small wooden boats and eaten in quick, deeply flavoured bowls. MAMA's Thai Connext version brings that bowl home: smooth, springy rice noodles in a dark, rich broth that balances the tang of tamarind with soy, fish sauce, warm spices and a slow-building chilli heat. The seasoning oil adds depth and aroma, while the fried garlic, spring onion and coriander give each spoonful the finish you would expect from a street-side stall. Ready in a couple of minutes: simmer the noodles in 300ml of water, stir in the sachets and serve.
