A long-established Hong Kong dried goods house founded in the 1970s, On Kee sources each ingredient with care. Euryale ferox, also known as fox nut or gorgon fruit, is a small round seed from the prickly water lily, harvested in China and carefully dried. Mild and gently starchy with a soft bite once cooked, it is a classic soup ingredient, often simmered with lotus seed, pearl barley and dried longan in nourishing Chinese-style soups. Rinse before use and add to soups or congee.
