A long-established Hong Kong dried seafood house founded in the 1970s, On Kee has become one of the best-known abalone specialists in the city. Tender whole Australian abalone, each tin holding 6-8 pieces, simmered in a rich braised sauce of soy, oyster and savoury seasonings until deeply flavoured and ready to serve. The abalone keep a gentle spring in the bite while soaking up the glossy, umami-laden sauce. Plate with blanched greens or pair with rice, noodles or poon choi, a centrepiece dish for Lunar New Year tables and celebration dinners.
