On Kee Superior Morel 60g

A long-established Hong Kong dried goods house founded in the 1970s, On Kee sources each ingredient with care. Morel, known in Chinese as "yang du jun" for its honeycombed sheep-stomach shape, is one of the most coveted mushrooms in the world, prized for its deep, almost meaty aroma and complex smoky-woody notes. These are harvested in China and carefully dried to concentrate their fragrance. Rinse well and soak in warm water until fully rehydrated, then braise with chicken, simmer in soups, or add to risottos and cream sauces. The soaking liquid, once strained, makes an exceptional stock.
