A Hong Kong style chilli oil from Shun Fat Ma Kee, founded in 1986 and built around a pared-back recipe of just soybean oil and chilli. The result is a clear, ruby-red oil with a clean chilli warmth and none of the sediment or heavy seasoning of Sichuan-style versions. The same kind of chilli oil you would find on the lazy Susan at a traditional yum cha house, designed to be spooned over prawn dumplings, siu mai, rice rolls and congee. Also excellent drizzled over noodles, stirred into dipping sauces for dumplings, or mixed with soy and black vinegar for a quick table condiment.
