Okinawa Powdered Brown Sugar from Mitsui Sugar's Spoon Brand, made from 100% Okinawa-grown sugarcane. Kokuto — Okinawa's traditional black sugar — is made by boiling freshly pressed cane juice and allowing it to crystallise without refining, which preserves the natural minerals and molasses from the cane itself. The powdered format makes it considerably easier to work with than block or lump kokuto: it dissolves quickly in liquid, blends evenly into batters and doughs, and measures straight from the bag without any grating or crushing. The flavour is rich and deep — distinctly more complex than regular brown sugar, with a warm, slightly caramel-like sweetness and a mild bitterness that rounds the overall character. It works well in all the obvious Japanese applications — black sugar milk tea, kuromitsu syrup, warabimochi, manju, and kakigori — but also in Western baking, smoothies, and wherever a flavourful, unrefined sugar is wanted. The 300g bag is a practical everyday baking size.
