What makes this salad special is how it was made. Potatoes, eggs, and mayonnaise are notoriously difficult to freeze well. Ice crystals break down the floury texture of potatoes; eggs lose their soft, yielding bite as they freeze slowly and their structure collapses; mayonnaise separates as its oil and water split apart.

At WASO, we tackled this by blast-freezing the salad immediately after preparation, suppressing ice crystal formation to preserve the fluffy texture of the potato, the tenderness of the egg, and the smooth, creamy coat of the mayonnaise. The freshly made flavour is locked in entirely.
