Creamy Slow-Roasted Sweet Potato Salad 120g

A creamy, gently flavoured salad made with smoothly puréed baked sweet potato, blended with double cream, mayonnaise, and honey. Each sweet potato was carefully wrapped in aluminium foil and slow-roasted in the oven for approximately two hours, drawing out a fluffy, tender texture and concentrating its natural sweetness. A touch of orange juice adds a subtle brightness to balance the sweetness, whilst the richness of Grana Padano cheese brings the whole dish together with a smooth, refined finish.
Perfect alongside grilled chicken or pork, or simply as a side dish when you need that one extra dish on the table. Delicious on its own, it adds a gentle splash of colour to any meal.
Mayonnaise has long been considered one of the more challenging ingredients to freeze successfully. The freezing process tends to cause the oils and water to separate, compromising its characteristic smooth, creamy texture. To overcome this, WASO blast-freezes the salad immediately after preparation, locking in the velvety richness of the mayonnaise and preserving that freshly made quality. Simply defrost under running water for approximately 10 minutes, and it is ready to serve.
